Nikhil and Alketa, I just wanted to say what a great time I had cooking for you both yesterday. From the moment I arrived, you made me feel so welcome. You’re both such warm, kind people, and your politeness really created a relaxed and easy vibe in the kitchen. Even though I don’t usually cook for strangers, your hospitality turned the whole experience into something truly special. It was so much fun getting to know you both a little more and learning what an amazing couple you are—and allies, too! I also really enjoyed meeting your wonderful child, Rio, and Alketa's father. It felt like a day full of love and connection, and I’m really grateful for the chance to share a little piece of Ecuador with you. I really hope the dishes tasted as good as I hoped, and that I managed to bring out the true flavors of Ecuador. Every dish was made with a lot of love, and I can’t wait to do it again!
